Taggiasca olive pate

Taggiasca olive pâté is also made from the ready-to-eat pickled olives. Salted olives are drained, dried by hand and poured into a specific machine (pitting machine) that will stone them and reduce the pulp to a very fine paste, which is ready to be packaged in glass jars. To keep its characteristics unaltered, the paste will be covered with a thin layer of Taggiasca ‘centrifuge’ extra virgin olive oil.
